In case you didn't know, Yedda's on the Go Catering and Meal service along with our Power Meal Plans were created by me, Edla Collora.
We are all busy these days, raising our families, taking care of our elderly parents, staying on top of our careers and trying to keep it all balanced. Phew! I am tired just thinking about it all. It isn't easy to keep it all together, and it can be quite difficult trying to balance it all.
Good news, we want to bring the family back to the dinner table. Yedda's on the Go will provide great food options everyone will love. Trust me, I am a single Mom of 4, and they all love my cooking. My meals are simple to heat up, with minimal mess to cleanup. Your time is precious, so we will create the shortcuts for you. We will keep you from shopping on your only days off for the food that will most likely be thrown away because you did not have the time to prepare it.
My qualifications: I have been working in the restaurant and catering industry for well over 40 years. Yes, that is correct, I did start when I was 5 years old. Now a woman never reveals her true age, at least not once we hit 40 (haha).
It all started when I was at the age of 16. My Grandfather (Italian and French Chef) traveled to Amherst, NY to spend the summer with my family. During his long visit, he had shared his and my father's passion of cooking. My father passed away when I was very young. He and his family owned a restaurant for years in New Jersey.
My Grandfather knew I also had a passion for cooking. He started his daily lessons to encourage me. He taught me the culinary style of creative cooking and shared wonderful recipes he and my father had created together for their restaurant.
My fond memories of my father were of him cooking on Sundays. He would cook all day for my entire family and we would feast that evening. If we were lucky, we would get watered down red wine served to in a plastic cup, perhaps that was to help us go to bed without giving Mom and Dad any trouble.
During my culinary service as a Chef, I have won several awards and cooked on television for my family's restaurant located in Amherst, NY. We started our Meals to Go with classic well balanced comfort foods and of course our family restaurant's most loved menu entrees. Recently we have evolved into the Power Meal machine for those healthy minded folks!
Although my style of cooking would be considered healthy and clean eating, this is because the only best ingredients goes into each dish they are well balanced and made with love!
I love cooking for others, it gives me great pleasure.
